Golden Turmeric Chai Chia Seed Pudding
Filling, flavoursome.. One of our favourite Desserts on the go
Ingredients
- 1⁄4 cup of chia seeds
- 1 ½ cups of coconut milk
- 2 teaspoons of curQone Turmeric Chai powder
- 1 teaspoon vanilla bean powder
- 2 teaspoons maple syrup
- Pinch of salt

Method
Blend everything, except for the chia seeds, until it is well combined and the milk has a beautiful yellow colour.
Place the chia seeds in a large bowl and pour in the liquid. Whisk well and then set aside whilst the chia seeds absorb the liquid. Allow the mixture to rest for around 20 minutes, whisking every five minutes or so. When the liquid has been mostly absorbed you should have a pudding-like consistency.
You are welcome to enjoy the pudding as it is or leave it to soak in the fridge overnight and enjoy it the next day. In the morning, stir the pudding one final time, adding a touch more liquid if you need it. Bear in mind the more liquid you add you may dilute the flavours slightly.
Spoon the chia pudding mixture into bowls or jars and top with coconut, pistachios and fig if you please
